In my quest to make delicious desserts without oil or butter (combined with my new obsession with chia seeds), I came across this recipe for Chia Banana Oatmeal Muffins. I'm usually not a fan of muffins since they tend to be either dry or not sweet enough for my liking. I added agave to the recipe and the glaze on the top to make them more like a "dessert". These were very moist and sweet! Delicious!
Chia Banana Oatmeal Muffins
2 tablespoons chia seeds
3/4 cup flour
3/4 cup oatmeal
2 teaspoons cinnamon
2 teaspoons baking soda
3 ripe bananas
2 tablespoons honey
1 tablespoon agave
1 tablespoon vanilla
1 cup applesauce
1/4 cup egg beaters
Combine chia seeds, flour, oatmeal, cinnamon, and baking soda. Mix bananas, honey, agave, vanilla, applesauce, and egg. Combine wet and dry ingredients. Bake in greased muffin pan at 350 degrees for 18 minutes. Makes 1 dozen moist and delicious muffins.
Glaze:
1/3 cup powered sugar
1 teaspoon water
Mix water and powered sugar to make a glaze. Drizzle over the top of cooled muffins.
